Parsnip Soup

This was a surprise – so simple and the taste so lovely. Great for a rainy day.

Ingredients:

  • 1 big parsnip
  • 3 big potatoes
  • one small yellow onion – next time try using spring onions
  • 2 cloves of garlic
  • oregano
  • pepper
  • lemon juice
  • 800 ml of water
  • 250 ml of oat cream (Kaurakermaa)
  • some lemon juice
  • Rye bread
  • Parsley

How to:

  • Chop the onions
  • Cut the veggies in cubes
  • Fry the onion in a cast ion
  • Add the veggies
  • Fry for 2-3 minuttes
  • Add the water
  • Cook until veggies are tender
  • Add salt, pepper and herbs
  • Add the cream
  • Blend ⅔ with a little liquid
  • Pour back in the casserole
  • Serve with rye bread and parsley.

Notes:

The next day I added a few almonds that was yummy.
