This was a surprise – so simple and the taste so lovely. Great for a rainy day.
Ingredients:
- 1 big parsnip
- 3 big potatoes
- one small yellow onion – next time try using spring onions
- 2 cloves of garlic
- oregano
- pepper
- lemon juice
- 800 ml of water
- 250 ml of oat cream (Kaurakermaa)
- some lemon juice
- Rye bread
- Parsley
How to:
- Chop the onions
- Cut the veggies in cubes
- Fry the onion in a cast ion
- Add the veggies
- Fry for 2-3 minuttes
- Add the water
- Cook until veggies are tender
- Add salt, pepper and herbs
- Add the cream
- Blend ⅔ with a little liquid
- Pour back in the casserole
- Serve with rye bread and parsley.
Notes:
The next day I added a few almonds that was yummy.
